About two months ago (at the peak of citrus season), we were having dinner with a small group of friends where one of them brought this cilantro citrus salad as a side dish. I had never seen a salad made out of just cilantro in place of the usual leafy greens and I’m not typically wild about beets either, but somehow…this salad worked. And it was delicious.
Mixed with crunchy celery, tangy blood oranges, sweet beets, flavor-packed pistachios, creamy feta cheese and freshly squeezed lemon juice as a vinaigrette, this cilantro citrus salad is packed with flavor that blends beautifully together in an unexpected way.
Serving this fresh dish on the side will surprise your dinner guests and introduce them to a whole new world of salad possibilities. Even this one is completely customizable as you can substitute different citrus, vegetables and cheeses. This is the combination I personally love and most prefer.
1 bundle of chopped cilantro
2 peeled & steamed beets, diced or julienned
2 blood oranges, peeled and segmented then coarsely chopped
2 stalks of celery, chopped
1/4 cup deshelled pistachios
Sprinkled feta cheese
1 freshly squeezed lemon juice as vinaigrette
Some other options you could try are snap peas instead of celery, mandarins or grapefruit in place of oranges, bleu cheese instead of feta, or fresh lime juice over lemon. There are numerous combinations available and all will be a fresh introduction to a new kind of salad. Enjoy!
