Today, I’m sharing a special Easter treat to serve your dinner guests this holiday. When my husband and I lived in Miami for his medical school training, there was a Godiva chocolate shop around the corner from our apartment. It was a dangerous weak spot for us, especially when I was pregnant. During my second pregnancy, I discovered that they sold these gourmet peanut butter cups. Not being a Reese’s Peanut Butter Cup fan but lover of peanut butter and Godiva, I tried one and it immediately went on my list of cravings for the following few months. Godiva has stopped making them but I’ve been able to recreate these rich, gourmet peanut butter cups as the perfect Easter dessert or take-home treat for your family and guests.
Gourmet Peanut Butter Cups
Makes about 9 large cups
3 oz milk chocolate chips or melting bits
3 Tbsp unsalted butter, softened
1 cup Jif creamy peanut butter
2/3 cup powdered sugar
1/2 tsp vanilla extract
Dash of kosher salt
Place cupcake liners in a cupcake baking pan. Melt the chocolate chips in a microwave-safe bowl on low heat, stirring every 30 seconds. Coat the bottom of each liner with 1 tsp of melted chocolate and brush the chocolate up the liner 1/3 of the way to create a cup-like shell. Refrigerate for at least 20 minutes.
In a medium bowl, beat butter until soft and fluffy. Add peanut butter and mix well for a creamy, smooth mixture. Add vanilla extract and a dash of kosher salt, then mix. Gradually add powdered sugar, beating until well-incorporated. Put peanut butter filling into a ziploc baggie, zip shut and snip one corner off to pipe with.
Pipe peanut butter filling into the cold chocolate cups. Drizzle additional melted chocolate over the filled cups using a spoon or fork. Keep refrigerated until ready to serve.
To offer as a take-home gift for your Easter guests, fill wooden baskets or paper baskets with crinkle grass, place gourmet peanut butter cups atop and wrap with cellophane or place inside treat bags and tie with ribbon or twine. Remember to keep refrigerated and indulge in a few of your own!
